With the game I've been using CE on, it seems that I have no luck with finding base addresses manually or via pointer scans. It's possible for games to not have static pointers right? When I debugged with "What writes/accesses this address" I'd get some info from there on the address to find a pointer to, and get some results, though these only seem to be relevant when the debugger is attached, if I start to debug other addresses these pointers change to that address being debugged. 2 were green, the rest dynamic, yet none keep the same address.
The parts of the game I'm trying to change are instanced, such as deploying an item or effect/ability. The only success I've had is with AoB scans, that can get rather large, some still have signatures that are too weak to be unique.
Are there any other approaches you could suggest? I'd also like to identify some functions when they're triggered or booleans that I can't switch on/off constantly(think treasure chests), the addresses change when the level is restarted not just when the game is restarted.

I am using AoB injection already. It's not viable for some values, or perhaps I need a larger AoB going over 200 bytes.
Even so some values do not appear writable, I can't find any base addresses manually or via pointer scans, I tried to use code injection but each attempt either did nothing or crashed the game...it might have some protection.
I've thought of using DBVM but a little concerned about data corruption warning. As the game supports modification/hacks via lua I'm going to give that a go now. I'd love to know how to use the more advanced features of CE if they could help.
