Cheat Engine

I've never used Cheat Engine before, and it's very confusing. I tried to change some HP values in Undertale, and when I tried to save my changes, I got an error message about being unable to create the CT file. Something about it being a "read-only file system"?

What on Earth is going on? This thing isn't much use if I can't actually, you know, USE IT.

Just apply this;

1) Open CE.
2) Click "File" in the menu bar.
3) Click "Save As" from the window that opens.
4) Give it a name in the registration window.
5) Confirm and complete.

If the above blank ".CT" record was successful, there is something wrong with your error message record.
And if so, organize your question to ask more broadly.

I also cannot save a .CT file. CE pretends to have saved the file. But when I want to load it again, "file must exist" is displayed. So CE thinks that the file has been saved and realizes only when I try to load the file that there is none (I can't see the file in the folder either). I am using CE 7.3 on a MacBook with M1 chip.

try making the folder you saved in accessible for everyone.

i think you may have ran CE the 2nd time without sudo

Ah I didn't give the permission for the folder to everybody! Thanks a lot!

The "read-only file system" error usually means that Cheat Engine doesn't have permission to write to the folder where it's trying to save the changes. You might want to try running Cheat Engine as an administrator or check the folder permissions where Undertale is installed. That should hopefully solve the issue and get you back on track with your HP tweaks!
