When ever I close my game the values turn to question marks, I can't try to verify my pointer maps because the values turn to question marks when I close my game.

That's intentional. You save the pointer maps then scan for more pointer maps and compare the two so that Cheat Engine can narrow down the correct pointer paths.

I would recommend starting with the tutorial available in the help menu of Cheat Engine.
