Say that when I enter a room the game reserves memory for room-specific structs.
Is there a way to get only the memory that has been allocated after the first scan? I haven't found the option so maybe there's a plugin or secret option.

it's not as accurate, but tick "Active memory only" and then tick the red cross next to it.
then do the thing that loads the room specific structs and do an unknown initial value scan.
It will of course also contain a lot of other stuff, but it'll be limited to memory accessed since clicking the X _________________
Do not ask me about online cheats. I don't know any and wont help finding them.
