I am using CE to dissect a data structure. I go to the address I need, but the offset list only goes down to 0FFC.
How do I add more bytes to this list so I can scroll down much further?

| When creating a new structure. Set the size in the prompt to something larger. The value is in decimal just a heads up.

Another way to do it:
Highlight an address, Ctrl+C, then Ctrl+V to paste in as many as you want.

Thank you both. I do not mean the amount of addresses in the list, I mean the amount of bytes listed per address, the offset drop down size per address.

| You do realize that the nested list you see is a series of addresses, right? Both of the above advice apply to the nested list, too. Alternatively, you can define a pointer structure and add it to the pointer so it follows the defined structure you picked.
