I have noticed some addresses plain disappear. I thought I was being paranoid, but today I loaded the tables I had been working on and an entire header which contained dozens of addresses is gone!
Is this common occurrence? Do Cheat Engine tables have a maximum number of addresses that can be saved? Can I get those addresses back?

Perhaps you grouped them under another address, with the option set to hide children when not active

Thank you for such a fast answer!
That could be the case. I expanded all my headers and subheaders and the addresses are nowhere to be found. I mean... those addresses were weapon stats, they were only modified when I wanted to change them, otherwise they are a fixed value. I don't know what active means in this context.

rightclick on every address and see if they have a "group config" field at the bottom
Then uncheck "hide children when deactivated"

Nope, they're all on "manual expand/collapse"
Cheat engine does not have a maximum address right? There's no risk of having stuff overwritten?

nope,
the other reasons can be just forgetting to save, or having windows undo your last write actions to restore the system
you're sure you saved after you added that list ? any systemcrash after that ?

Not really. They were added at least since February the 15th and I have proof I used them a few days ago. No crashes or any of the like.
Perhaps I accidentally deleted them while clearing unused addresses...
But thank you for your concern! I only wanted to know if CE could be doing something weird.
