losing two of our three head sushi chefs at work. all thats left is me (still learning) and one other. correction, am working 55 hours a week not 60. but dont know how long i can continue. i dont even know the whole sushi menu yet. only able to do carpacio, sushi and rolls. and slow as fuck in comparison. tatakes me like 3-4 mins for a roll when they do it in a few mins. amd if i go fast im sloppy and doesnt look nice so i can sell it. im falling asleep in the home stretch, one more hour of work, break is over in five mins.

This could be your opportunity to really take charge and be the next manager though. Just keep practicing and you'll get faster if you're eating healthy and sleeping well.

im definitely improving but this is something that takes months if not years of practicing. and i dont have that kindof time. amd not gumma be manager dont want to be anyway. this is only temporary til i finish college.
