Technically, yes it is possible, but it may not be simple.
How experienced are you at using cheat engine? If you're a total noob, try to beat the tutorial (help menu->cheat engine tutorial), at least step 5: code finder. If you can't, consider placing a request in the Single player cheat request section.
If you're used to cheat engine, basically, the idea is:
1-freeze game
2-search for unknown 1 byte value
3-resume game and play until the number goes into flashing state
4-freeze game again
5-filter with changed value
6-resume game
7-do more freezing, filtering with (un)changed value according to circumstances, and resuming
8-"find out what writes" on the variable that stores that number's flashing (or not) state
9-replace that code with code that does nothing
10-save all that in a shiny auto assemble script
I assume you're speaking about the numbers at the left of the board, numbers that are always shown. Otherwise if you're speaking about the numbers that appear on the board when you destroy gems, meh... I assume they are dynamically allocated and live for a second or 2, so I don't know how to hack those.
