I've been looking at the current ultrabooks available, and I don't know which to pick so I figured some members own a few ultrabooks and can share their thoughts which is the best.
To the extent of my research, the toshiba ones look the best.

Those are all terribly overpriced for the specs and none of them can even game, let alone process professional graphics.

First of all, I am not planning on using my ultrabook to intensively game or "process professional graphics". I will be using it as a very portable computer for school work mostly, and perhaps a few smaller games. Your assumption that I will be gaming is not without some validity, as this is a website dedicated to gaming and I of course plan on having some games on the laptop. However, as I previously alluded, I am not planning on running skyrim with max graphics on this computer, so don't let that stop you from sharing some helpful thoughts.
Secondly, when you say they are terribly overpriced, I assume you are making that assertion because you know of similarly capable laptops in terms of both computing power and portability which are cheaper. If not, please refrain from wasting my time.
If anyone else has any experience with owning an ultrabook, please share your thoughts on this matter.

I wasn't assuming that you were gaming, it's obvious that you're not since your selection in computers fall under a different category.
Ultrabooks are a waste of money and time, nobody needs a powerful processor in a laptop unless they're going to be using it as a workstation or for gaming, in which case there are much better options.
Since you are using this for school and maybe some casual gaming, I would recommend the Acer Aspire line.
I recently purchased a $350 Aspire (can't recall the exact model) that has a 2.7ghz p6 and 4gb ddr3, with a 500gb hard drive.
As far as essay writing, internet browsing, and spread sheet crunching goes, it's as fast as you'll ever need.
I was even able to get a decent fps in TF2 with the settings toned down, though it couldn't handle skyrim at all.
I had no issues or complaints (until somebody forcibly broke it >.>) and recommend it as a budget or school/work laptop to everyone.
It's a 14" screen and has a decent battery life too (6-8 hrs casual use).

In my opinion, wait for trinity to drop.
No other excuses work, nothing else wait for it for increased performance in both areas (cpu, gpu, battery life, same cost).
No shut up, you don't need it right now as the semester is almost over wait for trinity by AMD.

damn trinity is going to be dope. i just read some articles on it, and i will wait for it to be released.
