Cheat Engine

Hello, I have quickly gone through the tutorial and have found the addresses of various resources etc. Problem is, if I quit the game and come back to it, these addresses are no longer valid. I know there is a 'find out who writes to this address' and I have tried to use it, but there is something I am not getting right since it doesn't work even with I try to find out who writes here... I change the description and stop and close the window but again if I quit the game and come back to it the addresses don't work. Is there a way to bind or something the addresses that write to this place? Does that make sense? How do I work around this issue?
