I'm buying a 27" iMac in the next week or so and the model I selected comes with a 6770M graphics card built in. I'm confused about what that M on the end means. Is it a special crap mobile version ? Is it gonna be noob considering the resolution will be 2560 x 1440 ?

It's the mobile version of 6770.
It only supports up to 720p, so you'll be using integrated graphics for anything over that.
I'd tell you what I think of it except it won't fucking work.
I got a laptop that's supposed to have switchable graphics between the intel graphics and the radeon, but there's no option to switch to the radeon.
Gonna return this shit.

Yes, the "M" usually represents a mobile version of the GPU, which is less powerful than the desktop counterpart(s). For videos that card would do fine, but gaming wise... you'd best look in another direction (but seeing how you're getting a Mac I assume you won't be gaming much anyway).
Cryoma, most graphics cards fully support 2560*1600 resolutions, and the limitation is not the processor, but the display interface. (ie. HDMI - 1080p, DVI - 1600p).

On my laptop it's a function key combination to switch between the two. Perhaps check into that if it similar for you.

I wanna do iOS dev :/ But definitely gonna dual boot. I'll die without Windows.. Idk what is Office Space : P

That's sorta noob. I don't know why they're putting a crappy mobile GPU in a box which costs 2000$+.. Well I'll mostly be using the graphics card for 1080p films but probably the occasional game too. This will be back on Windows though which I intend to install via BootCamp. Also intending to hook up one of my 24" screen to one of the ThundeBolt ports which has a resolution of 1920 x 1080 so I'm not sure whether that affects anything (putting extra load on GPU ?).

I never said the 6770M was shit, but assuming he would be gaming at 2560*1600 that card simply doesn't have enough power to run demanding games smoothly. CoD will be fine, but definitely not Crysis, Metro 2033, STALKER, BC2 or the upcoming BF3.

This includes benchmark lists for the 5870M, same chip in my laptop. Taking 30FPS in Metro 2033 on high, the gaming benches were probably ran @ 1080p. Compare that to an approximation of 26 FPS on the 6770M (based on the 5670M), then increase the resolution from 1920*1080 to 2560*1440. That will be a difference between 2,073,600 and 3,686,400 pixels drawn during gameplay, resulting in even lower FPS.
I do realize he can turn down the resolution and image quality in the game, but do you really like seeing pixelized images on the screen for prolonged durations?

Well I'm planning on hooking up my 2 current monitors ( 24" and 21.5" ) for a triple monitor config so perhaps I can play on one of the lower resolution monitors.. Just ordered the iMac. The stupid ThunderBolt >> DVI adapters cost £20 each -.- I don't know why I got an Apple remote either. It was probably a stupid move..

After a shitload of research and phone calls I've found out that the 6770m doesn't even work with the laptop itself but is solely for connecting external displays.
In other words, if you want to watch a movie or game on the laptop, the card will be useless and you're stuck with integrated.
In order to actually use the card you need to physically connect it to a monitor.
Stupid.
