How do I know what kind of value is what kind of scan type?

You don't know. But if You are experienced enough, You can at least guess if You want. Usually values are stored as integer (4 bytes) or Float.
If You don't have a clue, use the "All" type scanning.

Also how do I know if a certain value has been multiplied by another value?
And how can I find out how much it has been multiplied by?
And in the tutorial you find out about pointer adresses... the value is exactly the same so why cant you just get the adress from the origional scan?

You don't know that either. You need to use unknown initial value scan. If You have found it, You can check if it was multiplied compared to the number that is displayed in the game.
In the tutorial, there is no offset. It is just like [eax] or similar. But in most cases, there is an offset too, like [eax+44].
