It is depending on the game.

Usually it goes something like this.
You start up the game.
You minimize - and start up Cheat Engine.
You attach Cheat Engine to the game process (GameName.exe)
Now lets say you have 100 health points. If you're lucky, it's stored as 4byte (which is the default scan)
Now type in 100 and scan for it.
Then go back into the game, and lose some health. Let's say you fell down, and lost 6 health (= 94 remaining health)
Then go back to cheat engine and Next Scan for 94.
Keep repeating until you end up with 1 (or at least very few addresses), and then double-click on the address you think is your health value.
Now, in the lower end of Cheat Engine, tick the box on the left just besides the address, to freeze the current value (Meaning your health won't change. Either up or down). Or doubleclick the number, and set it to 500 to give you 500 health.
But you're probably not that lucky. So please present the game to us. Note: We DO NOT cheat in Online/Multiplayer-games!

Yes, this is good for FPS or RPG games. But RTS games are more difficult (unless You want to change only one unit's health). So it is really depending on the game itself.
