It's supposed to, to make your system run faster. If you start getting low on free memory, Windows will lower the amount of memory that the service host is using.

I just told you that it does that for a reason, it's perfectly normal, and nothing to worry about. Of fucking course something bad is going to happen if you terminate important system files, they're there for a reason.

your svchost enables/makes other process's to run, you need to find the sub-process that is making svchost use so much memory.
Check out Process Explorer:

Its basically a advanced task manager, you should be able to find out more about whats going on with that program.

A self terminating svchost could be an issue of computer security.
I suggest scanning your computer with this, for malware/spyware:
Malware Bytes Free

Then scanning with this for viruses:

just something im aware of, svchost is a common program that gets injected in viruses, so it could be a botnet injected in your svchost.

From a command prompt
tasklist /SVC will list all processes and show you what services are attached to it. tasklist /? for the help file.
Process Explorer is a really great program, but will propably overload you will info you do not want. If you use it just remember to filter anything but svchost
