The Nvidia GTX 295. I wouldn't reccomend it now, though.

Drop $150 on a card now, if you insist, then wait for DX11 cards to come out to go all out.

Or you could get the 4870X2 thats a monster as well.

Yes GTX295 is currently the best Graphics Cards available to date. 4870X2 is the best ATI Card... Personally I'd wait for the Nvidia GTX300/ ATI 5000 series which i heard are coming pretty soon...
