I find Corsair is best for RAM, Power Supplies...
Haven't tried anything else really...
If only they made a Corsair HX-750/720 I would have got one...

Totally agree! Corsair is the best out of those bunch. Plus it's commonly used.

The first one is useless considering you'll never use more than 6GB of RAM unless the system is a game server/very high-traffic web server or will be used for some kind of specialized purpose. Second one is better.
Yeah, though, I agree with Humper. Just get the cheapest Corsair (XMS series preferably; their 'standard' RAM isn't all that high of quality as far as I know) RAM you can find that meets the capacity requirements you're looking for. If you can't find that look for something by OCZ, it's almost identical quality-wise.

which is better?
Corsair TR3X1333C9 9-9-9-24
Corsair TR3X1600C9 9-9-9-24
Corsair TR3X1600C8D 8-8-8-24
Corsair TR3X1866C9DF 9-9-9-27
Corsair TR3X2000C8GTF 8-8-8-24

Linking each of those (note that amounts vary):
Corsair TR3X1333C9 9-9-9-24
Corsair TR3X1600C9 9-9-9-24
Corsair TR3X1600C8D 8-8-8-24
Corsair TR3X1866C9DF 9-9-9-27
Corsair TR3X2000C8GTF 8-8-8-24
If money wasn't an issue, I'd get the third. If it is, the second.
Also, be sure to go into the bios and check that the RAM is running at it's actual speed of 1600MHz. The engineering sample i7 920s and 940s had a locked RAM multiplier, disallowing RAM to run at speeds greater than 1066MHz. Thanks to a bit of persuasion by the major RAM manufacturers, they convinced intel to release the retail models of the i7 with an unlocked RAM multiplier, allowing it to run as fast as the board and DIMMs allowed.

Acually, if money isn't an issue the last one is 100% the best but its very expensive.
So I would go for a cheaper one. Preferably 1600mHz.

From my experiences with the ram mentioned here's how they rank
Kingston: Really expensive out of the bunch even for them value types, but they're pretty stable (This is what I've got personally, but the higher end version called Hyper X)
Corsair: They're only good if you go with the ones with a premium price tag. Value models have certain amount of stability issues with certain boards. Former co-worker who used to work with me keeps a stick or 2 of Corsair ram just for testing purposes and it has never failed on him, but as I've said before, they're only good with a premium price tag and the one he got, been using for quite a few years now, back then 1GB (Corsair XMS) cost near the triple digits.
OCZ: Never really used them so can't comment on it.
G.Skill: Have not used it personally, but always used this for picking out parts for a new build and so far many clients are happy with it.

Also, if you don't know much about overclocking, I suggest you read some guides on it.
You can honestly fuck up your CPU if you accidentally set the voltage too high.
