i7 build hands down. However:
The 750W Corsiar PSU is 100% overkill. If you'll be doing no-moderate overclocking, switch it out for a 450W Corsair PSU. If you'll be doing any heavy overclocking, get a 550W Corsair PSU.
The CPU fan sucks. Get a Xigmatek HDT-s1283 + the LGA1366 retention bracket. Very similar price after rebate with superior performance.
With the money saved from the 300 watts you'll never use, get this. The FlamingBlade GTI is one of the lowest-end LGA1366 boards money can buy. I don't recommend it.
Why would you get a USB soundcard? Hell, the on-board sound would most likely sound better than it anyway. No one gives onboard sound enough credit.
The Antec 1200 won't really do much an Antec 900 or CM 690 won't do. Only get it if you think you really need that much space. If not, save yourself $100 and get something less gimmicky.

usb sound card is definately a no. stick with onboard, but if you want some sound beyond that, go with something like a auzentech forte or somethign of the asus xonar series

Go for the i7 build, however there's some things that you could change.
Perhaps change the ram to this;
http://www.newegg.com/Product/Product.aspx?Item=N82E16820227381
Faster and only 10$ more after a MIR.
Also, if I were to tri-boot, I would get a 1TB HDD. The Caviar Black is great HDD, in fact it preforms better than the RaptorX in pretty much everything besides access time.
For the sound card, no. If you want premium sound, get a PCI interface sound card, such as a Creative Sound Blaster or a HT | Omega. I put an HT | Omega Striker sound card in my new build and I tend to like it better than my previous sound blaster. No to razer's sound card though.
Other than that that's about it.

If you own a Mac OSX on a PC, it's illegal. Apparently, Apple wants you to buy their crap.

Might wanna get a GTX 260 instead because its abit cheaper but at
SLI it is the same preformance as the 4890 in xCF but for a cheaper price.

doubtful unless you're CPU bound.
not to mention they tend to be absolute overclock monsters. 1ghz core clock? oh yes.
