What does it do performance wise(having more cores)?
Would a triple core 2.1 GHz be better than dual core 2.3 GHz?

It depends.
If you're playing a game that only supports 1 or 2 cores then the duo CPU would be best.

Pretty much what goldengold said.

But soon, more games will support more cores.

That's why at this very moment, for the most part dual core > quad core.

Everything comes down to what you're looking to do with the computer. If you want to say, encode video with x264, you'd want more cores because the program will use them. As a note, 3-core AMD CPUs (Phenom x3) are just throwaway quad cores, from the Phenom x4 line.

More cores are better. If the application doesn't support true multi-threading, it's probably written by crappy programmers. Some games like Crysis, Far Cry 2, and GTA IV use 4 cores. Others will folllow.

If it's threaded and very cpu intensive, then it will probably scale practically perfect.
