I'm looking at building an insane gaming machine with a budget of £6000 (including the monitor, keyboard and mouse). I'll pull the speakers and sound card from my main PC.

Motherboard - Asus Striker II Extreme nForce 790i Ultra SLi (Socket 775) PCI-Express DDR3 Motherboard

Processor - Intel Core 2 Quad Extreme Edition QX9770 "LGA775 Yorkfield" 3.20GHz (1600FSB) - Retail

Memory - 2x Corsair 4GB DDR3 Dominator 2000C9DF Twin3X

Graphics - 2x EVGA GeForce 9800 GX2 KO 1024MB GDDR3 TV-Out/Dual DVI (PCI-Express) - Retail

Hard Drives:
5x Seagate Barracuda ES.2 1TB SATA-II 32MB Cache - OEM
OCZ Core 128GB 2.5" SATA-II Solid State Hard Drive

Optical Drives:
Pioneer BDR-202BK 4x BD-R/RE Blu-Ray Serial ATA Dual Layer DVD Writer - Black
Asus DRW-20B1LT 20x DVD±RW SATA Dual Layer Lightscribe Rewriter (Black/Silver) - Retail

Case - Antec P190 Gaming Case - 1200 Watt Neo Link PSU (Gun Metal Black)

Monitor - Dell Ultrasharp 3008WFP 30" Widescreen LCD Monitor - Midnight Grey

Keyboard - Logitech G15 Gaming Keyboard

Mouse - Razer DeathAdder Blue 1800dpi High Precision Gaming Mouse

Total Price - £5417.71 (inc VAT)

The hard drives would be ran as a 4TB RAID array for my data, a single 1TB drive for the OS and my games would run on the 128GB SSD.
I chose the Dell 3008WFP as I have a 2407WFP and love it. I've heard that the 3008 is even more epic.

Any suggestions / improvements / things missing?

You havent got enough sata ports
The mobo has 6 and youve got 8 (6x HD 2x CD/DVD writers)

why you want 9800 GX2s if you're spending 6 grand? get gtx280s or 4870x2s

GTX 280 triple SLI! Insane... It can play Crysis on High detail on a 40 inch screen.

A set of two 9800 GX2 cards beats three GTX280 cards on performance. If GTX280 GX2 cards were available, I'd use them instead. I'm not really interested in getting an ATI Crossfire setup either - I prefer nVidia cards. Furthermore, there are no triple-SLI motherboards out there (that I know of) that'll fully take advantage of the combination of high-end DDR3 and a top notch CPU. They just don't have the FSB performance I want.

Regarding the SATA reference - I'll buy a 2/4 port SATA card and hook the drives up to that. In fact that should further speed up my RAID arrays as the controller won't be waiting for the optical drives to finish synchronous IO operations.
