I want to modify the skills in the game, but no matter if I use numerical modifications or search for values to add or subtract, I can't find the experience for these skills.
Does anyone know how to modify this game?

I'll take a look at it here tomorrow and see what I can find but for the time being, turning on debug mode seems to be a viable way to change values in the game. I'll get back to you about modifications via CE; I would give you a link to a video elaborating on how to turn on debug mode but I am not able to post URLS currently. Search YouTube to find the related video.

Okay so I came up with two possible solutions outside of debug mode:
Backup Your Game Files: Before making any changes, it's essential to create backups of your game files.
Locate the Game Files:
Go to your Project Zomboid installation folder. The default path is usually something like: C:\Program Files (x86)\Steam\steamapps\common\ProjectZomboid.
Inside the game's installation folder, you will find subdirectories containing game data, including the media folder.
Skills and Experience Files:
Look for files related to skills and experience in the media folder. The game's skills and experience information is stored in Lua files, and you'll need a text editor to open and modify them.
Modifying Skills:
Open the appropriate Lua file that corresponds to the skill you want to modify (e.g., "Carpentry" for the Carpentry skill).
Inside the Lua file, you can adjust values related to the skill, including experience point requirements, skill levels, and related attributes.
Testing Changes:
Make your changes to the skill and experience values.
Save the file and launch the game to see if your modifications take effect.
Keep in mind that in some cases, you may need to start a new game to see changes in skills and experience.
Or the CE Route: Launch Project Zomboid:
Start Project Zomboid in single-player mode.
Launch Cheat Engine and click the "Open Process" button.
Select Project Zomboid Process:
In the "Open Process" window, select the Project Zomboid process from the list of running processes and click "Open."
Search for Skill Values:
In Project Zomboid, your character's skills are stored as numerical values in the game's memory.
For instance, if you want to modify your Carpentry skill, you'll need to search for the numerical value that represents it.
Start by training or using the skill in-game to increase your character's experience in that skill.
In Cheat Engine, you'll then perform an "Initial Scan" for the exact numerical value (e.g., 10 for beginner, 50 for level 2, etc.) that corresponds to your skill level.
Refine the Search:
After your initial scan, perform actions in the game to change your skill level. This will narrow down the results in Cheat Engine.
Continue to perform "Next Scan" and "New Scan" until you identify the memory addresses that correspond to your skill's experience points.
Modify the Values:
Once you've identified the memory address for your skill's experience points, double-click on the value to change it.
Enter the desired value for your skill experience points.
Test the Changes:
Return to the game and see if your skill has been modified.
Save Your Progress:
Be sure to save your game after making any changes to skills.
