I have a game that closes when you task switch out of it, even if you pause it in Cheat Engine. The game 'knows' it was task switched.
Some things I can obviously do with hotkeys, but not everything. I'm trying to find a timer and even by hotkey searching for decreased values I'm ending up with around 700 addresses.
I need to be able to try freezing some, and attaching the debugger etc.
Any suggestions?

First idea, on windows platform the "lock user" command with the "windows flag + L" keys on the keyboard might be able to prevent this "task switched" detection. Maybe you can login to another user account (admin privileges) and perform the scans there without quitting/crashing the game.
Also, have you tried to use the server/client structure of cheat engine, means to perform all control options on another machine like a laptop or a android tablet?
You can also try to run your game in a containment area, e.g. for security on a windows machine I use the free "Comodo Internet Security", which allows me to run any application in a container area via the contex menu. Of course there should be many other tools to do this. This might prevent your task switch detection.

Run in Window. GeDoSaTo, Borderless Gaming, there are a few that force directx and other shit into a window.
You could try forcing the 'always on top' function, just in case it's about detecting the topmost window.
Lastly, use CE hotkey to bring CE forward instead of ALT+TAB.
