The game is BTD6 on a NOX VM, Most of the values are encrypted so I won't really care about those. One of the few things that I could locate were the pops for the tower (Kills). When I did find it, I tried to find out what was accessing this address, but even though the value was changing, no assembly code were appearing. I've tried VEH, WinDbg and Kernalmode. I'd think this would be a problem with the VM, is there anything that I could do to work around this?

perhaps the dbvm find what accesses option works, but you'll likely only find the emulator code that emulates the write instead of the game's code

Dbvm doesn't work (Unless I'm being an idiot and kernalmode debugger isn't Dbvm), the game uses .so files for its code (I believe it's the linux equivilent of a DLL) so cheat engine probably can't access that? (Or maybe it's lodead funny or something I don't know) all I know is that IDA can read it.
