How do I cheat?

Is it possible to look for a value that the value we are looking for is not?

For example, say I'm looking for health and I know that the health is not a value of "0" because I see it on screen as a bar of health. I know it has a value of something. How can I remove all results that are "0"?

Is there a greater than or less than way to scan for values? For example, I could search for greater than "0" for health?

Yes, change the scan type to "Bigger than..."

Ok, so that is to find a value greater than. But how about a "not equal to value".

So if I wanted to take away all values of "0", but not negative values. I want positive and negative values that are not "0"

Guess you'll have to do two separate searches then or write a custom search routine.
Not entirely sure what you hope to accomplish by searching not equal to.
