every now and again ill find addresses that no matter what i do, i cant change the value of it. it somehow changes itself back to what its suppose to be, any idea around that?

Perhaps you only found a display variable, or it's an online game.
If it's not an online game and just a display value then try a different kind of scan
E.g perhaps 100% energy is actually stored as 1.000 and the 100 is only used for display
Or if you have 34 of 40 hp, it's stored as 6 instead of 34
