You can save up on it and then do a major upgrade when Sandy Bridge-E arrives. HD5850 still has plenty of life in it and upgrading IMO won't show too much benefits besides a slight increase in FPS.
If you can save further wait for Ivy Bridge where Intel is going to begin using its 3D Tri-Gate transistors, this according to Intel may boost performance by up to 37% even at low voltages.
Ivy Bridge is the CPU after Sandy Bridge, runs on 22nm process, and we may see it late this year or early next year.

Performance is referring to power efficiency as far as I can tell, there shouldn't be a performance increase outside of clock speed going up.

An hd 6950 is much cheaper than the hd 6970, + you can flash it to an hd 6970
|

Buy the HD 5850 Xtreme from Sapphire ($130) if you can still find any. Crossfire it with your current HD 5850 and that will outperform any single card solution on the market right now. I think it will even be a competitor for the GTX 580.
Save the rest of the money.
