Every time I attempt to record/speak using my microphone (Headset) the program simply does not pick up my voice but it does record the sounds that my computer makes (Music, Windows Sounds etc..)
I know my mic isn't broken because I've tried it on my other computer and it works fine.

I'm not sure how on XP but go to your Recording devices or something (I presume it's in control panel somewhere).
Once your there, disable Stereo Mix and Enable the Microphone.

I'm assuming you mean this;
Didn't work.
Seeing as it won't let me change the volume of the mic, I think it's simply not detecting it.

Options -> Properties
Ensure that Mic is checked to show up. Also try changing to input instead of output in the options and adjust the mic settings in that one as well.

Done that, didn't help.
Odd, It works fine when I plug it in the back of my computer but rarely works when it's plugged in the front. Sucks so much, need to remove speakers to use headset with mic.

In some instances, when you plug the mic into the front, you will need to enable 'Advanced' properties for the Microphone in the sound properties you showed above and tell the system to use the front microphone jack.
So, plug in the mic to the front, click Options->Advanced, then click the 'Advanced' button under Microphone. You may need to change to 'recording' under properties as well to adjust it.

Just as I was about to do this, it suddenly worked.
Let's hope it keeps working after my restart.

Sound recording options:
* Mic: Records sound input from the Microphone.
e.g. Your voice or any other noise your mic is pointing to.
* Line-in: Sound recorded from a outside source.
e.g. Hooking up a old player to convert old songs to MP3s
*What you hear: Captures sound made by your computer
e.g. Play a windows default sound and it records it.
