Portable? There are sites like PortableApps for most applications you might want. As for games, I'm not so sure. Lots of games can work just from their install directory or can be found portable as warez. You could try out ThinApp (formerly Thinstall) to portablize installations yourself.

If you wanted a list, get an office suite (openoffice), web browser (to preference), text editor (notepad++ if you have no other preference), instant messaging client (pidgin), archiver. Maybe a picture viewer, media player (vlc). KeePass (v1) maybe.
