If I were you I'd wait a month or two for Intel's LGA1156 line of processors comes out, which'll be essentially a lower-budget-but-with-close-to-equal-power i7.
I haven't looked at prices lately, so I'll throw together a build. Give me a bit.

HD4890 + Phenom II 940 ($375 after rebate)
Normally I'd suggest a Q6600 in this price range, but the 45nm phenom II architecture is ever-so-slightly more efficient clock-for-clock than 60nm Core 2 architecture (3.0GHz phenom II 940 is approx. 600MHz faster than the 2.4GHz Q6600, not just in theory, but in reality), overclocks like the devil, and is almost $30 cheaper than the Q6600 - unless you're an Intel fanboy this one wins hands-down. Add in the combo below and it's fuckwin.
The HD4890 fits quite well in this price range.

Uses DDR2, supports the 940, has 2 PCI-E x16 slots for crossfire if you so choose, lots of other things, is also cheap. Very solid mobo for the purpose needed.
