I have never used Ipod or Itunes but I believe you need Ipod + iTunes and find export or extract or something...

Once you put music onto your ipod using iTunes you can't put it back onto your computer if you reformat or get a new one unless you use it as a HD and just drag and drop your stuff onto it from the c: to :e or w/e your drives are. e: being your ipod.
you can use a 3rd party program to extract music from your ipod if you put the music on using itunes.

Songs can be transfered back without any 3rd party software.
The problem when you transfered from iTunes to your iPod it changes it to a bunch of random letters. There are some songs that will keep their names.
Music are in located in F01, F02, F03, etc folders.

There are multiple programs that rip the songs off your ipod onto your computer. Find the program on warez forums. Hook your ipod up to your new computer, run the program and rip all the songs to your new computer's itunes and re-sync it.
I personaly used "TouchCopy".
