Well you wont see a amazing performance increase, unless you play at really high resolutions. I would get the 256MB version, and upgrade to the new 8800GTS when you are able to afford it. But it's up to you, it's your money.

Well, I'm worried that my motherboard can't handle it. Isn't it that the nVidia 8 Series won't work with non-SLi ready motherboards?

It will handle it as long as you have a PCI-E slot, it should run fine. No, NVIDIA card will run on all motherboards with an PCI-E even if it's not SLI certified, but if you want to run in SLI, then yes, you need to get a SLI ready motherboard.
EDIT: I'll add this for pure information, SLI ready motherboards usually comes with the NVIDIA nForce chipset, like the 650i,680i,... Since NVIDIA didn't give SLI permit to Intel, all motherboards using the X38 and the P35 chipset wont be able to run in SLI.

Then I will upgrade to an eVGA 8600GT. I found one for $99.
Edit: I found a similar one, but its XFX for the same price.

I don't think so. Probably on DX9 with low settings.
