Does anyone know a good site or book or something that will teach me more about this? I've followed guides on how to do it, but I'm not learning, so I'll always have to just follow the guides. I want to learn so that I can do more on my own instead of googling for guides the whole time. I tried looking in this site for a good tut but I couldn't find one.

You will not find too much about packet sniffing.

There are some books on it, but they are very few.
Your best bet is to find help online. It is very hard to find good tutorials on the net , but there are some around you just have to spend time and look.

To Monkeys, I want to edit the actual packet.

And also I have been looking around the internet, I found one that was pretty good and taught me how to use WPE but it was pretty basic.

I have a tutorial from a site no longer up, It goes through steps with images to edit a packet/make a filter and send it back using WPE and AIM.
Check your PM if you want to read it.
