Yes, you can. Choose value type - String.

Not much with it alone, since text is a display thing so changing it will only change visual stuff on the screen, but the game mechanics will remain unaffected
But it can be used to find the actual variable. Often a pointer to the real variable is stored in a structure that also contains a pointer to that string
And sometimes it's just useful to find the building cheat codes

Well there might be other uses. For example even if you enable the console in Borderlands 2 (UE3 game), most of the commands have been locked off by automatically appending "say" to the front. You can use CE to find these instances and null them out, resulting in regaining the ability to run commands (at least the ones that still exist).
