| does the having technology cause the AI to have it when the knowledge is spread? (the game has this feature where your technology as well as AI's spread amongst territories)

v1.05c (LASP) is out.
Can be downloaded through the launcher. Also googled it and found out that it can be downloaded here - (gamefront[dot]com/files/21582627/ck2_1_05c_patch.zip) and many other place

I guess so. It is part of the game algorithm.

If you are on Steam then no. At least I don't think there is a way.
But if you have a standalone version or *cough*demo*cough*  then you don't have to update if you don't want to.

For those who have steam account:
Here are the steps to disable the automatic patch. Please do the following:
1) Go to your steam account;
2) Right click on the game and choose Properties.
3) Click on the Updates tab;
4) Choose "Do not automatically update this game" option;
5) Click close;

There is also certain  (<- demon) site where someone provided all available DLCs (including ruler editor).
But that is besides the point.
