searches for text. if you have a look at how text is represented then when it is ASCII then it each letter is assigned an ASCII value then the string terminated with null bytes. UNICODE is slightly different with each letter taking up 2 bytes which is why you have 2 types of scans for those. look up data representation if you're still confused or have a look in memory view (hex dump) at how it is translated and stuff.
